Choose your favourites ingredients
If you don’t have much time, buying hummus at the grocery store is also a good option. Fortunately, we now have delicious hummus available from different brands like Sabra. However, you know how I love cooking so my Roasted Red Pepper Hummus was obviously made by me!
When we say Mediterranean Hummus Mezze platter we usually think of fresh and colourful ingredients. My platter consisted of different kinds of olives, marinated dried tomatoes, mint, Harissa, pita bread, Afghan bread and lemon. I also added some marinated artichokes, labneh, tahini and some canned fish. To have a full “meal” I made a very easy salad with cucumbers, tomatoes, red onions and lots of parsley. In other words, have fun and add as many things as you want! Don’t limit yourself or your platter to the “usual” mediterranean ingredients.
A few tips to give your platter more flavours
The 3 most important toppings when making a Mediterranean Hummus Mezze platter are zaatar, sumac and olive oil. You can basically use these toppings all over your platter especially on your bread. I always toast my flat Afghan bread and pita bread in the oven with some olive oil, sumac and zaatar.
Don’t be scared to add spices all over your platter to have more colours. I usually add spices and olive oil on the tahini, labneh and hummus. I also use the oil from my marinated dried tomatoes a bit everywhere like my toasted bread.
Fun tricks to make it prettier
Building a platter full of ingredients is a lot of fun because there are no rules whatsoever. You can do whatever you want! For example, don’t be ashamed to leave some of your ingredients in their original can like the harissa or the smoked sprats. Don’t forget to leave some fresh mint, coriander and parsley all over your platter, these herbs can add lots of flavours
You can also caramelised some lemon on your platter. To do so, add a bit of oil on a pan and warm it over medium heat. Add your lemon on your pan and cook them until you reach the wanted colour, 5 minutes should be enough. This will give a beautiful golden colour to your lemon and will look stunning on your platter!
