I LOVE pizza but I sometimes find the crust to be a bit too much. In addition to being too heavy for my own taste, I don’t have the patience to make the pizza dough from scratch. Personally, I’ve never been a fan of commercial pizza dough which is the reason why I use puff pastry instead. A good store-bought frozen puff pastry made with butter is honestly a lifesaver! Easy, delicious and perfect for enterntaining
I love creating recipes that can easily be enjoyed with a bunch of people. Like my hummus mezze platter, this pizza is perfect for enterntaining. You will be able to prepare this recipe in just a few minutes without killing yourself in the kitchen. The idea is to cut your pizza in small squares to make things easier for everyone. In addition, I would highly suggest an easy peasy homemade drink by 1 ou 2 Cocktails. She created a simple Gin tonic with limoncello cocktail, perfect for this pizza recipe. In just 30 minutes, you could have everything on the table ready for guests.
Ingredients for my fennel, ricota and onions puff pastry pizza recipe
- 2 fennel bulbs, trimmed, cored, and thinly slices
- 2 large yellow onions, halved and thinly sliced
- ½ teaspoon freshly ground black pepper
- Freshly ground salt (to taste)
- 475 gr ricotta
- 1 tbps honey
Heat the oven to 400°F.
Unfold the pastry sheet on a pan sheet. They usually come on a baking sheet already, so simply use this one. Prick the center of the pastry thoroughly with a fork. You can fold over the edges about 1/2 inch on all sides.
Bake for 10-12 minutes or until the pastry is golden brown.
Meanwhile, heat over a large sillet with some oil over medium heat. Add the onions and fennels all at once with the pepper and salt. Cook for about 6 minutes, stirring occasionally. I personally prefer crispy vegetables for this specific recipe which is the reason why I do not cover them when cooking. Once they’re ready, add your honey.
When you’re pastry is ready, spread the ricotta leaving 1/2 inch all around the puff pastry. Top with your onions and fennel mixture. You might have some leftover so make sure to use them for a delicious salad the next day!
To get the roasted effect on your pizza, change your oven settings to roast at high temperature. I believe 5 minutes would be enough but make sure to keep an eye on your puff pastry pizza. Little trick if you’re impatient, change your settings to broil. However, be really careful since broil can literally burn your pizza in 2 minutes!
