We finally had a taste of the warm weather lately and I was craving a salad! Salads can be quite boring but also delicious and full of flavours. My Goat Cheese Salad with Pears, Pecans and Maple-Balsamic Dressing is VERY easy to make but also a nice meal to enjoy with friends.

A quick and easy recipe to make when having people over

Having some friends at your place is nice until you spend hours in the kitchen and get exhausted. Therefore, I’ve always liked the idea of gathering my friends for a nice and light lunch. This way, you get to enjoy their company without spending the whole day in your kitchen.

Goat Cheese Salad with Pears, Pecans and Maple Balsamic Dressing Recipe

  • 80 gr. of arugula
  • 175 gr. of cultivar tomatoes
  • 1 pear
  • Avocado oil
  • 1 cm slices of goat cheese (as much as you want)
  • Salt & pepper, quantity depends on your own personal taste
  • 2/3 pecans
  • 1 fresh baguette (cut in slices and toasted)
  • 1 tsp of rosemary

Preparation

To begin, cut a piece of parchment paper the same size as your baking pan.

After this, cut your pear in 6 slices and place them on your pan one by one. Add the avocado oil, rosemary and salt & pepper. Put in the oven at 350 °F, for 10 minutes. To finish, I like to add a 2 minutes with the roast program to have a nice texture.

In a different pan, add your pecans and bake them in the oven for 8 to 10 minutes. You can also grilled them in a frying pan if you prefer. I’ve always preferred grilled pecans in my salad.

Next will be the cutting and baking of the goat cheese. Add your slices of Goat cheese and bake them for a few minutes on a parchment paper. This step requires attention and you will need to check them frequently. The baking of these truly depends on your oven but it shouldn’t be more than 5 minutes to bake.

In a salad bowl or plate, place the arugula first and cut your tomatoes in 2 and decor your salad with them. When everything is ready, add the pears and pecans.

Finally, add the goat cheese at the end when serving your salad!

Maple-Balsamic with Dijon easy recipe

  • 1 tbsp of Dijon
  • 6-7 tbsp of olive oil
  • 1 1/2 tbsp of Maple syrup
  • 1 tbsp of balsamic vinegar
  • Salt & pepper

Mix everything in a bowl and whisk until you get a creamy texture. Once everything is ready, add this delicious dressing to your salad. Et voilà!
